Coconut chutney is the quiet one on a South Indian plate, easy to overlook until it's gone first. Ground fresh, mellow, faintly sweet, the kind of chutney a temple-town breakfast stall gets right without ever writing it down. We kept that same soft-spoken flavour, no shouting, just moreish.
