Grandmothers Were the First Food Scientists

Nobody's grandmother ever called herself a food scientist. She called herself busy, mostly, and occasionally called herself right, usually after being questioned about a kitchen rule that made no obvious sense until decades later, when someone with a lab coat and a research grant confirmed she'd been correct the entire time.

She fermented before anyone explained why

Take fermentation, which we've written about elsewhere on this blog and won't repeat in full here, except to say this: your grandmother didn't ferment dosa batter overnight because she'd read about gut microbiomes. She did it because that's how batter was made, full stop, no further explanation offered or requested. It took modern food science a while to catch up and explain that fermentation partially breaks down starches, builds flavour compounds you can't fake, and does things to grains and lentils that raw batter simply can't. She knew none of that vocabulary. She knew the batter needed the night to "come up," and that was reason enough.

The rooftop was a food lab

Sun-drying is another one. Papads, vathals, all manner of pickled and dried vegetables laid out on rooftops and terraces across the country, usually with strict instructions not to let a stray cat near them. This wasn't decoration. Slow, controlled dehydration removes moisture in a way that prevents bacterial growth while concentrating flavour, which is precisely why a well-dried vathal has a completely different, deeper taste than the same vegetable fresh. Food scientists now have proper names for this, controlled dehydration curves, water activity levels, the works. Your grandmother had a rooftop, a sense of the season, and an instinct for exactly when something had dried enough without going brittle. She wasn't running an experiment. She just knew.

"That's how it's done" was applied chemistry

Spice pairing is where this gets almost funny, because a lot of what reads as tradition is actually applied food chemistry nobody bothered to label as such. Turmeric with black pepper, a pairing that shows up constantly in Indian cooking, happens to significantly improve how your body absorbs one particular compound in turmeric. Nobody's grandmother knew the word "bioavailability." She just knew turmeric and pepper "went together," the way you simply knew jeera belonged with certain dals and not others. Ask her why, and the honest answer was usually some version of "that's how it's done," delivered with zero doubt and zero interest in further discussion.

Seasonal eating gets treated today like a wellness trend with its own hashtag, but it used to just be called shopping, back when the vegetable available at the market was whatever was actually in season, because nothing else had reliably made the journey to your town yet. Mangoes in summer. Specific greens only in winter. This wasn't a lifestyle choice anyone debated. It was simply what existed at the time, and it happened to line up neatly with what most nutritionists now recommend for variety and freshness, minus the marketing language and the seasonal produce box subscription.

None of this is to say every single kitchen rule from every household held up under scrutiny. Some of it was genuinely just superstition, and some of it varied wildly from house to house in ways that had nothing to do with food safety and everything to do with a specific person's specific preference, passed down as gospel regardless. But a striking amount of it, the fermentation timing, the drying methods, the spice pairings, the seasonal instinct, turns out to hold up remarkably well once someone finally ran the actual experiment. She just ran it first, over decades, with no funding, no white coat, and no interest in publishing a paper about it. The kitchen was the lab. Dinner was the result. Being asked "are you sure?" was, apparently, never a serious threat to the conclusion.

We think about this a lot while making dosa chips, mostly because it keeps us honest about what we're actually allowed to call innovation. We didn't invent slow fermentation. We inherited it, the same way most of you did, from someone in your family who'd have found the phrase "patent-worthy fermentation process" mildly ridiculous, correct on the science, unnecessary on the description. We just built a factory-scale version of a method she'd already perfected on a stove, and did our best not to mess up what she'd already gotten right.
